Broccoli + Feta Fritters
INGREDIENTS
1 medium sized broccoli
4 eggs, free range and organic
½ bunch shallots, chopped
½ cup pine nuts, chopped almonds or sunflower seeds
1 large handful of basil leaves (or parsley), chopped
1 cup SR gluten free flour
80 grams of feta cheese (or parmesan or haloumi)
1 lemon
Cracked pepper
Olive oil
1. Chop up the broccoli finely and steam for 5 minutes.
2. Beat the eggs in a bowl and add the flour, pine nuts, shallots, salt and pepper and basil.
3. Crumble feta and place into the mixture.
4. Roughly chop broccoli and add to the mixture.
5. Add extra flour to the mixture if it is too wet.
6. Heat a large frying pan over moderate heat and add oil.
7. Ladle amounts of mixture into the frying pan and cook the fritters for 2-3 minutes on each side, or until golden. Makes 8-10 fritters.
8. Serve with a squeeze of lemon juice with a fresh salad!
