INGREDIENTS

1 cup fresh or thawed fruit
¼ cup of water or coconut cream
2.5 Tbsp gelatin powder

 

 
 

1. Whizz the fruit and liquid in a food processor or blender.
2. Place a small saucepan over low heat and pour in the fruit mixture. Add the gelatin and stir for a few minutes until it has dissolved and there are no lumps or grainy bits.
3. Place about 9 paper muffin liners into a muffin tin and pour a little of the mixture into each.
4. Place in the fridge to set for an hour then store in their paper liner in an airtight container in the fridge.

I’ve made two batches in the last week. One was mango with water and the other was mango with raspberries and coconut cream.
