Brussel Sprout, Haloumi + Zucchini Fritters
INGREDIENTS
400g Brussel sprouts, finely shredded
2 zucchini, grated
180g haloumi, grated
2 eggs
½ cup gluten-free self-raising flour
1/3 cup almond milk
1. Heat some olive oil in a large frying pan over medium heat. Add the Brussel sprouts and cook for several minutes until tender.
2. Transfer to a large bowl and add in the zucchini, haloumi, eggs, flour and milk and stir well.
3. Heat oil in frying pan over medium heat and add ½ cup portions of the mixture to form fritters.
4. Cook for 3 minutes on each side or until golden and then flip. Serve with a squeeze of lemon and some roast veggies and brown rice.
