INGREDIENTS

9 eggs
2 shallots or half an onion
1 garlic clove
A combo of veg eg zucchini, mushies, capsicum, roasted pumpkin cubes, corn from the cob
2 slices of bacon
Fresh or dried herbs (I used parsley from the garden)

-Preheat the oven or grill to 180.
-Heat some olive oil in a stainless steel frying pan and throw in bacon, shallots/onion and garlic and cook for 3 minutes.
-Dice up all the veg and throw it in for another 5 mins.
-While that’s cooking, whisk the eggs in a small bowl then pour then into the frying pan with the veg. Add in herbs and salt and pepper to season. This is a good time to add cheese in if you choose to eg shredded cheese or feta cubes.
-Allow to cook on a low heat for 10 mins then transfer to the oven/grill for 10 mins or until golden.
-Allow to sit and set for 10 mins before slicing.

 

 
 

Frittatas are such a lifesaver for busy people! You can warm a slice any time of day in a sandwich press, just have cold with salad. Once you know how to make them, you can throw in any combo of veg!
