Banana + Almond Muffins

 

 
 
 
 

 
 
 

INGREDIENTS

1/3 cup + 1 Tbsp nut butter (you can buy 100% roasted almond butter from most health food shops)
1 egg
1 tsp vanilla extract
3/4 cup mashed ripe bananas (about 3 small ones)
1 cup almond meal
3/4 tsp cinnamon
1 tsp baking soda

I added in 1/4 cup of sultanas but you could add chop chips or some orange zest!

 

 
 

1. Preheat oven to 180 and line a muffin tin.
2. Mix the wet ingredients in a bowl.
3. Add in the dry and combine well.
4. Bake for about 12 mins or until golden.
