Zucchini Slice
INGREDIENTS
2 zucchinis, grated
1 carrot, grated
1/2 red capsicum, diced
1 corn cob, kernels sliced off
1 onion (or shallots), diced
1 clove garlic, diced
1 cup shredded cheese
5 free-range eggs
1 cup gluten-free self-raising flour
4 rashes bacon, diced
1 Tbsp dried Italian herbs or half a cup of fresh herbs like basil or parsley
1. Preheat the oven to 180 degrees.
2. Combine all of the ingredients (except the tomato) in a large mixing bowl. Season with salt and pepper.
3. Pour into a lined baking dish and bake for 45 mins or until golden on top. Leave to set for about half an hour. Serve with a fresh garden salad.
How awesome is good old zucchini slice with a squirt of tomato sauce! So yummy cold for lunch the next day and much more interesting than a sandwich in your kiddo's lunchbox!
