Work Lunch 11
INGREDIENTS
Today’s lunch:
-poached egg
-sauerkraut
-cherry toms
-avo
-mushies roasted in the oven in some tamari
Would have loved some quinoa or brown rice in there and some baby spinach or roasted veg but tomorrow is shopping day so today the cupboards were bare!
Also a super yummy fruit salad with mango, grapes and strawbs.
Breakfast for lunch!

My husband makes the three of us eggs every morning and he always cooks an extra one for my lunch. Yesterday while dinner was cooking I chopped up about 8 large mushies into quarters and popped them on a baking tray with some olive oil and a splash of tamari (wheat-free soy sauce) and baked them for 15 mins. They’re in a container in the fridge and will last 3 or 4 days.
