Beef Casserole
INGREDIENTS
500g diced beef (or lamb)
1 garlic
1 onion
2 celery stalks
1 carrot
1 zucchini
6 mushies
1 sweet potato or pumpkin
1 cup vegetable stock
1 Tbsp mustard
1 tin organic tomatoes
1 bottle pasta sauce
Handful of fresh Italian herbs eg parsley or basil
1. Brown the beef, onion and garlic in a frying pan.
2. Chop up all the veggies and throw them in the frying pan.
3. Add the stock, mustard, tomatoes, sauce and herbs. Stir to combine.
4. Throw in the slow cooker on low for 6-8 hours. Serve with brown rice or pasta.
Once a month I’ll make a batch of beef casserole and a chicken and veg soup in the slow cooker and portion them up for Eadie’s day care lunches. I thrown them in the freezer then grab one out the night before. Too easy!
