Cauliflower + Haloumi Fritters with Green Goddess Hummus
INGREDIENTS
½ small cauliflower, cut into florets
1 small broccoli, cut into florets
3 kale leaves, finely sliced
100g haloumi, grated
3 shallots, sliced
4 eggs, lightly beaten
½ cup plain gluten free flour (I used brown rice flour)
¼ cup milk (I used almond)
Zest of one lemon
1 tsp ground cumin
1 tsp ground coriander
GREEN GODDESS HUMMUS
Juice of one lemon
400g tin chickpeas, rinsed and drained
1 cup firmly packed mixed herbs (combo of mint, coriander and parsley)
1 garlic clove, sliced
¼ cup greek yoghurt
2 Tbsp tahini
FRITTERS
1. Steam cauliflower and broccoli until tender (not too soft).
2. Place on a chopping board and finely chop. Place in a large bowl.
3. Add remaining ingredients and mix together well.
4. Heat olive oil in a large frying pan over medium-low heat. Add half a cup amounts of the mixture to the pan. Cook for a few minutes each side til golden. Place on a paper towel-lined plate.
GREEN GODDESS HUMMUS
1. Add all ingredients to a blender or food processor and whizz til smooth.
