Eggs with Green Goddess Hummus
INGREDIENTS
400g tin chickpeas, rinsed and drained
1 cup firmly packed fresh herbs (I used corriander, mint and parsley)
1 garlic clove
1/4 cup Greek yoghurt
2 Tbs tahini (I actually forgot to add this and it was still great!)
Whizz everything in a food processor or blender and store in an airtight container. I originally made the hommus to go on some veggie fritters but had leftovers so literally put it on EVERYTHING this wk! It's so zesty and delicious!
I love a 7 min boiled egg! The most perfect runny yolk!
