Tortilla Quiche
INSTRUCTIONS
I wanted to give this viral recipe that kept popping up on my feed a go. It was SO easy. SO yummy. And you better believe I’ll be telling all my clients to make it for the tastiest brekkie/lunch/snack/lunchbox filler!
Preheat the oven to 200.
Pop a large wrap in a baking dish. I used this cake tin because my baking dish was too big therefore the wrap was too flat. I used an Old El Paso gf wrap.
Crack in 4 eggs and add 2 Tbsp cottage cheese (cheese is totally optional) into the wrap and whisk with a fork.
Add in paper, salt and any veg you like. I did mushies, spinach, capsicum, shallots, parsley and dried Italian herbs.
Bake for 20 mins in the oven until the wrap is crispy and the top is golden! Wait about 20 mins until it has cooled a bit and set before slicing.
