INGREDIENTS

Throw everything in a frying pan and cook until tender (about 20 mins):
500g beef mince
Shallots
2 carrots
2 celery stalks
1 zucchini, grated
1 cob of corn
1 medium sweet potato, grated
1/2 bunch fresh coriander
1/2 bottle passata
1 rounded tsp beef liver powder
1 chic stock cube
1 tsp smoked paprika
1 tsp cumin powder

 
 

 
 

INSTRUCTIONS

  1. I sprinkled in about 1/3 cup of plain gf flour and stirred it through right at the end to absorb any excess liquid.

  2. Heat up the flat sandwich press. Throw on a large or small Old El Paso gf wrap, spread a thin layer of mixture over it, add a sprinkle of cheese and add another wrap on top. Put the top of the press down and let it sizzle for 3-5 mins until the top is golden and a bit crispy.

  3. Transfer to a chopping board and slice with a knife or pizza cutter. So easy!

  4. Brett made the mince/veg, I added in the spices etc, then we set Eadie up with the sandwich press, chopping board and pizza cutter and away she went! I could hear her from the next room, talking like she was on a cooking show
    She had one for dinner, then another one for breakfast this morning.

    If you have fussy eaters, try to involve them in the planning and cooking of family meals! These school holidays might be a fun time to watch some cooking videos and get messy!
