Green Frittata
INGREDIENTS
10 eggs
2 shallots, sliced
1/2 broccoli, florets steamed
2 handfuls baby spinach, sliced finely
1 zucchini, grated
100g feta, crumbled
1 cup fresh herbs. I used a combo of dill, basil, parsley and mint. Definitely try to find some dill.
Zest of two lemons
Freshly cracked pepper and pink salt
INSTRUCTIONS
Preheat the oven to 200.
Mix everything in a large bowl. Pour into a big rectangular dish lined with baking paper.
Bake for 25 mins or until golden on top.
