Tuna and Haloumi Fritters
INGREDIENTS
2 stalks of shallots
2 eggs
1 cob of corn
1 carrot or zucchini (grate finely then squeeze any liquid out by hand over a sieve)
80g halloumi, grated
425g tin of tuna in spring water, drained
Fresh parsley or basil
Cracked pepper
1/4 cup milk (I used almond)
2/3 cup plain flour (I used brown rice flour)
-Mix everything together in a bowl.
-Heat a generous amount of olive oil in a frying pan over medium heat.
-Scoop 3/4 cup amounts (or smaller if you prefer) of the mixture and form fritters then place in frying pan. Even if you think the mixture will fall apart, fear not. The haloumi will melt and hold them together.
-Flip when golden. Then drain on paper towel and serve with veggies.
Eadie always requests these fritters which are a family fave of ours. I love them for lunch with a salad the next day. Fritters and Thai fish cakes are a great way of getting more fish into kids!
