Basil Pesto
INGREDIENTS
2 cups of tightly packed basil leaves
1/2 cup freshly grated parmesan cheese or Danish fetta
1/2 cup olive oil
3 garlic cloves (or measure that with your heart)
2 Tbsp pine nuts, cashews or almonds
Whizz everything (except the olive oil) in the food processor for 30 seconds. Then while the food processor is still running, slowly pour the oil in. Store in an airtight jar in the fridge and consume within the week.
Pesto is so versatile and not to mention, excellent for the immune system! Spread it on toast with poached eggs, on chicken and salad wraps, over steamed broccoli, pasta and on chicken schnitzels!
