Asian Chicken Nourish Bowls
INGREDIENTS
2 chicken breasts
2 Tbsp kecap manis (sweet soy sauce) or tamari
1 cup quinoa
1/4 stock cube
2 carrots
1 handful green beans
1 broc
2 Tbsp sesame seeds
A forkful of sauerkraut for each plate
Dressing
1 Tbsp white miso paste
1 Tbsp honey
1 tsp tamari (wheat-free soy sauce)
2 tsp sesame oil
2 tsp rice wine vinegar
3 Tbsp water
1. Cook the quinoa in 2 cups of water and the stock cube. Bring to the boil then reduce to a gentle simmer until all liquid is absorbed.
2. Cook chicken in a frying pan with some olive oil or coconut oil and the kecap manis.
3. Steam the veg.
4. Assemble chicken, quinoa and veg on a plate and drizzle on the dressing, sesame seeds and sauerkraut.
My husband and I could live on this meal! We create some kind of variation of this dish every week. We'll either do steamed veg (pictured) or salad and we'll swap the protein around between chicken (pictured), salmon or tofu and then the grain with either quinoa (pictured), brown rice or brown rice noodles.
We have enough for two adult dinners, two lunches the next day and a dinner for Eadie.
