Apple Crumble
An oat-free apple crumble! Coeliacs rejoice!
INGREDIENTS
6 apples, skin on. Pink Lady or Royal Gala are the sweetest. You could also add in a few pears or some rhubarb!
Cinnamon and nutmeg, measure with your heart
1 cup almond meal
1 cup dessicated coconut
1/3 cup maple syrup
1. Preheat oven to 170.
2. Cut apples into either wedges/thick slices/cubes and stew in a large frying pan with some splashes of water and cinnamon for about 10-15 mins. Keep adding splashes of water as needed. We want the apples tender, not mushy.
3. While the apples are cooking, combine all ingredients into a mixing bowl. Add cinnamon and nutmeg.
4. Pour apples into a square brownie tin or shallow glass baking dish and cover with crumble mix, pressing down with a spoon.
5. Bake for 30 mins or until golden. Allow to cool slightly and serve with Coyo vanilla bean icecream :)
-This delicious one tasted like an Anzac bikkie!
-Feel free to add in some frozen berries right before you put the crumble on top!
-A great way to use up all those average looking apples and pears in the fruit bowl at the end of the week!
-Super yummy the next day for brekkie with Greek yoghurt!
