Chicken, Broccoli + Cheese Nuggies
INGREDIENTS
500g chicken mince (you could use turkey)
1 broccoli
2 eggs
1/2 cup shredded cheese. Would use a saltier cheese next time like feta or halloumi!
1/2 cup gf breadcrumbs (I used the Orgran brand)
2 tsp dried Italian herbs
2 rounded tsp Nutra Organics veggie broth powder
Salt and cracked pepper
1. Preheat oven to 180.
2. Cut florets off broc and steam until tender. Slice finely and allow to cool slightly on chopping board.
3. Mix everything in a bowl.
4. Line a baking tray and smoosh into nugget shapes. Easier if you have a little bowl of water to wet your hands. I did one tray of 18 nuggies then on another tray I put 11 in two silicone muffin trays (pictured). It didn’t actually make it any easier because I had to roll them anyway…
5. Bake for 20 mins.
Great for lunchboxes for the kiddos, with a yummy salad for lunch or you could even make into burger patties and cook in a frying pan!
