Coconut Rough
INGREDIENTS
1 cup shredded or desiccated coconut
1 cup almond meal
1/2 cup melted coconut oil (I used cacao butter which smells like Mars Bars!!)
3 Tbsp cacao powder
1/4 cup maple syrup
1/4 cup chia seeds
1/4 cup peanut butter or almond butter
1 tsp vanilla extract
1 pinch pink salt
1. Mix all ingredients in a large bowl.
2. Press into a lined loaf tin or a silicone muffin tray. Throw in the freezer for 10 mins then store in a container in the freezer.
