Gingerbread People
INGREDIENTS
2 cups plain flour plus extra for dusting (I used the Orgran gf plan flour from the supermarket plus some brown rice flour I found in the pantry)
1/2 tsp bicarb
2 tsp ground ginger
2 tsp ground cinnamon
1/2 tsp ground cardamom (which I didn’t have so I used cloves instead)
A pinch of salt
3/4 cut firmly packed soft brown sugar
125g chilled butter, cut into cubes
1/4 cup honey
2 Tbsp boiling water
Preheat the oven to 180. Line two large baking trays with baking paper.
Combine dry ingredients plus the butter into a good processor and blitz until mixture resembles fine bread crumbs.
Stir the honey and boiling water together in a small mug and pour into the food processor and blitz again for a few seconds.
Scatter some flour down on your kitchen bench and pour out the mixture. Form three balls, wrap in cling wrap (I used a ziplock bag) and place in the fridge to chill for 30 mins.
Grab one dough ball from the fridge and place on a sheet of baking paper on the bench. Place another sheet on top and roll out to half a centimetre. Peel off the top sheet and use cookie cutters to make shapes. Gently peel cookies off and transfer to lined baking tray.
Bake for 10-12 mins or until golden. Allow to cool completely before moving. The mixture makes around 30-something bickies.
If you’re a fun mum, unlike me, you can ice and decorate them! I actually just love the flavour of them already and think they’re sweet enough.
