INGREDIENTS

RISSOLES

Olive oil spray

500g chicken mince (or turkey)

2 shallots, finely sliced

1 clove garlic finely grated

1 Tbsp fresh parsley or basil, finely sliced

1/3 cup gf crumbs

1 egg

1 heaped tsp Nutra Naturals chic bone broth powder (optional)

COATING

1 tsp smoked paprika

¾ cup gf crumbs

1/3 cup freshly grated parmesan

Salt and cracked pepper

 

 
 

1. Preheat oven to 200 degrees. Spray a metal baking tray with olive oil spray. The key here is to not use baking paper!

2. Combine all ingredients for the COATING in a shallow bowl and set aside.
3. Place all the RISSOLE ingredients into a bowl and mix with clean hands.
4. Grab ¼ cup of the mixture at a time and form into patties. Cover in the coating and place on the baking tray. The mixture will be sticky so it helps to have a little bowl of water nearby to dip your hands in to form the rissole! Repeat with the remaining mixture to make 12 rissoles. Spray generously with olive oil spray.

5. Bake in the oven for 18-20 mins, turn halfway, spraying with more oil, then allow to golden. Don’t overcook as we don’t want to dry them out.
