Slow Cooked Paprika Chicken
INGREDIENTS
Olive oil
8 chicken drumsticks
1 brown onion, chopped
2 garlic cloves, finely chopped
2 shortcut bacon rashers, finely chopped
1 large red capsicum, chopped
6 mushies, chopped
1 zucchini, chopped
1 handful green beans, chopped
2 teaspoons sweet paprika
2 tablespoons plain flour
410g can crushed tomatoes
1 cup chicken stock
1 handful fresh flat leaf parsley or basil, chopped
1. Heat oil in a large, deep non-stick frying pan. Cook chicken until browned all over. Transfer to slow cooker.
2. Add some more oil to the pan and add onion, garlic and bacon. Cook for 5 minutes.
3. Add veggies and paprika and cook for 2 minutes.
4. Add flour. Stir to coat all ingredients. Cook for 1 minute.
5. Add tomato, stock and herbs, stirring until well combined. Season with pepper.
6. Pour all ingredients into slow cooker and cook on a low heat for 6-8 hours.
Serve with brown rice and a dollop of Greek yoghurt or shaved Parmesan cheese on top!
