Banana + Sultana Brekkie Muffins
INGREDIENTS
¾ cup mashed banana (approx. 2 large over-ripe ones)
3 large free range eggs
2 Tbsp maple syrup or honey
1 tsp apple cider vinegar
1 tsp vanilla extract
Finely grated zest of one lemon or orange
1 ½ cups almond meal
½ tsp baking powder
½ tsp baking soda
Sultanas (measure them with your heart!) You could also used chopped dates!
1. Preheat oven to 180 degrees.
2. Whisk together the mashed banana, eggs, sultanas, maple syrup, cider vinegar, vanilla and lemon zest until smooth.
3. Add ground almonds, baking powder, soda and a pinch of fine pink salt. Mix until just combined.
4. Spoon into a silicone muffin tray and bake for 15 mins or golden on top. Store in an airtight container for up to 3 days.
