INGREDIENTS

1 cup blueberry juice

2 Tbsp Nutra Naturals gelatin powder

 

 
 

1. Pour juice into a small saucepan and sprinkle in gelatin powder. Stir to combine.
2. Allow to sit on the bench for five minutes for the gelatin to “bloom”. After this time is will be considerably thicker.
3. Place saucepan on the stovetop and turn on to the lowest heat. Stir continuously. The purpose of this is for the gelatin to melt so it’s not gritty. It will only take less than one minute. We don’t want it to bubble.
4. Place a 12 hole mini muffin silicone tray on a chopping board and slowly pour in the liquid. Carry the chopping board to the fridge and allow 30 mins to set. Store in a sealed container in the fridge for about 3-4 days.

I used the Complete Health organic blueberry juice from the health food shop. It’s about $19 for a one litre bottle and tastes a bit like that Ribena blackcurrant drink you had growing up! The antioxidants in blueberries are rich in an antioxidant called proanthocyanidins which decrease inflammation and increase good bacteria in the gut!
