San Choy Bow

INGREDIENTS

500g chicken mince (or crumbled tofu for vego’s)
½ bunch shallots
1 clove garlic
A tin of bamboo shoots or water chestnuts
Fresh ginger, finely grated
1 carrot
1 zucchini
1 broccoli
½ red capsicum
Handful green beans or snow peas
1 bunch fresh coriander or mint
A combo of tamari, sesame oil and sweet chilli sauce
2 limes cut into wedges
A packet vermicelli rice noodles
Iceberg lettuce, washed

 

 
 
  1. Place the noodles in a small saucepan and cover with boiling water. Put the lid on and let them sit for 5 minutes. Drain and set aside.
    2. Heat some coconut oil in a wok or large frying pan. Add the mince, garlic, ginger and shallots and stir for a minute.
    3. Finely dice all the veggies and add all remaining ingredients including sauces to your taste.
    4. Gently pull off individual lettuce leaves. Rinse in water and let everyone add a small portion of the mixture to each leaf like a serving bowl. Squeeze on fresh lime.
