Hidden Veg Choccy Muffins

 

 
 

My daughter was deeply offended when she found out what was hidden in the muffins... Then instantly asked for another!

 
 

 
 
 

INGREDIENTS

2 eggs

1 ripe banana

½ cup baby spinach

1 cup grated zucchini – squeeze out excess liquid

½ cup grated carrot

⅓ cup olive oil or melted coconut oil)

¼ cup milk of choice (I used almond

¼ cup greek or coconut yoghurt. Or coconut cream from can

¼ cup maple syrup or honey

1 tsp vanilla extract

1 ¼ cups gf plain flour

½ cup cacao powder

1 tsp baking powder

1 tsp cinnamon

Choc chips (measure with your heart)

 

 
 
  1. Preheat the oven to 180°C fan-forced.

  2. In a blender or food processor, combine banana, eggs, oil, milk, yoghurt, maple, vanilla and spinach until smooth.

  3. In a large bowl, mix together flour, cacao powder, baking powder and cinnamon.

  4. Pour the wet mixture into the dry ingredients and gently fold to combine.

  5. Place a clean tea towel on the bench and finely grate the zucchini and carrot. Gather the tea towel in your hands so the grated veg is in a ball inside then squeeze tightly over the sink so as much liquid as possible comes out.

  6. Add the grated veg and choc chips and mix until just combined.

  7. Spoon into a silicone muffin tray and bake for 20–25 minutes.

VARIATIONS

I think this would be great with a few frozen raspberries pressed into each muffin right before going into the oven!
