Buttery, Vanilla Cookies

 

 
 

Sometimes simplicity is all you need…

 
 

 
 
 

INGREDIENTS

100g butter, sofented

1 tsp vanilla extract

½ cup sugar (caster, brown or coconut)

1 cup almond meal

1 egg

1 cup gf plain flour

 

 
 
  1. Preheat the oven to 180 and line a baking tray. Place the butter, vanilla, sugar and almond meal in a mixing bowl and and beat until pale and creamy. Crack in the egg and beat until just combined.

  2. Fold through the flour with a wooden spoon.

  3. Roll tablespoons of dough into balls and gently press down onto the tray, allowing some room to spread.

  4. Bake for 15 mins or until golden.

VARIATIONS

-add in orange zest and cinnamon or half a cup of choc chips with a sprinkle of salt on top!
