Green Pea Pancakes
INGREDIENTS
500g frozen green peas
½ red onion
1 cup cornflour
2 eggs
Handful of fresh mint
1. Blanch peas in boiling water for 2 minutes. Drain and allow to cool.
2. Add all ingredients to a food processor and blitz until half the peas are blended.
3. Heat some olive oil in a frying pan over medium heat and pour in 3 or 4 pancakes at a time. Flip after a few minutes. Serve with fresh lemon, cottage cheese, pesto or an egg on top.
