Chicken Snitzels -polenta

 

 
 
 
 

 
 
 

INGREDIENTS

I used to buy gluten-free crumbs but they are so full of rubbish! This is my little production line for making homemade snitty's!

1.5 cups of polenta with cracker pepper, pink salt and 1 Tbsp dried Italian herbs
2 free range eggs, whisked
4 free range chicken breasts, sliced in half to make them thinner

 

 
 

1. Dip the chicken in the egg wash, then place in the polenta, coating both sides.

2. Heat some olive oil in a frying pan and cook snitty on both sides until golden.

Polenta is finely ground corn meal. It's super affordable and can be found in the health food shop or the supermarket.
