Tofu + Miso Brown Rice Balls

 

 
 
 
 

 
 
 

INGREDIENTS

1 egg
1 Tbsp miso paste
2 cups cooked brown rice (cook one cup of rice in two cups of water)
200g firm tofu, grated
3 shallots, finely sliced
1 nori sheet, cut into long strips and then into small flakes
½ bunch of coriander, sliced finely
2 Tbsp sesame seeds
1 Tbsp fresh ginger, finely grated

 

 
 

1. Preheat oven to 200 degrees and line a baking tray.
2. Place the egg and miso in a mug, stir to combine then set aside.
3. Place the rice, tofu, onion, coriander, ginger and nori into a large bowl and stir to combine.
4. Place half the mixture into a food processor and whiz until the mixture comes together.
5. Return to the bowl, pour in the egg/miso mixture and sesame seeds and stir to combine.
6. Roll tablespoons of the mixture into balls, place on tray and then into the oven.
7. Cook for 15 minutes or until golden and firm. Makes 30-40 balls.
