INGREDIENTS

3 eggs
1/2 cup milk (I used almond milk)
1 Tbsp honey
1 tsp vanilla extract
1/2 cup of coconut flour
1/2 cup of arrowroot flour (aka tapioca starch. Found in baking aisle of supermarket or at the health food shop)
1 tsp baking powder
pinch of himalayan salt
Optional: zest of one lemon or orange

 

 
 

1. Whisk together the eggs, milk, honey and vanilla in a medium sized bowl.
2. Add coconut flour, arrowroot, baking powder and salt and whisk until thoroughly mixed. The mixture should look thick as coconut flour absorbs a lot of liquid.
3. Butter or oil in a frying pan and pour mixture in using ¼ cup measurements. Once in he pan, use the back of the spoon to gently spread the mix out a bit. Fry on a low-medium heat about 3 minutes each side. Serve with bananas and honey/maple syrup! Make in advance and freeze for a nut-free lunchbox treat!
