INGREDIENTS

It can be super helpful to roast up a tray of veggies to add to wraps, omelettes, salads, pizzas or to snack on with hommus. Add in as many different coloured veggies as you can find such as mushies, fennel, pumpkin, celery, red caps, sweet potato, cauliflower, carrot and zucchini.

 

 
 

Chop everything roughly, add pink salt, cracked pepper, a few sprigs of rosemary from the garden and a good glug of olive oil. Roast in the oven on 200 until everything is nice and golden! Store in the fridge in an airtight container.
