INGREDIENTS

500g sweet potato, peeled
3 rashers short cut bacon, diced
½ brown onion, diced
1 clove garlic, diced
2 eggs
¼ cup fresh basil of parsley, chopped
1/3 cup gluten-free flour
¼ cup parmesan
Cracked pepper

 

 
 

1. Heat some olive oil in a frying pan and add the bacon, onion and garlic. Saute for 5 minutes until onion softens. Set aside on a plate lined with paper towel.
2. Grate sweet potato and place on a clean tea towel. Squeeze all the excess liquid out over the sink. Place in a large bowl.
3. Add in onion mixture and all remaining ingredients and stir well.
4. Heat some olive oil in a frying pan over medium heat and form mixture into flat patties with your hands. Cook for 5 minutes or until golden on each side.

Makes 8 patties. Yummy served hot or cold and great for lunchboxes! Perfect with a poached egg and smoked salmon on top!
