INGREDIENTS

1 1/2 cups gluten-free plain flour (I use the Orgran brand from the health food aisle of the supermarket)
2 tsp baking powder
1/2 tsp bicarb soda
1/2 tsp pink salt
1 Tbsp olive oil
3/4 cup milk of your choice (I use almond)
4 eggs, separated
1 tsp vanilla extract
1 tsp ground cinnamon

 

 
 

1. Pre-heat waffle iron.
2. In a large bowl, mix the flour, baking powder, soda, salt and cinnamon together.
3. In a separate bowl, whip the egg whites until they form stiff peaks or resembles whipped cream.
4. In a small bowl, whisk together milk, yolks, vanilla, and oil.
5. Add the milk mixture to the dry ingredients and combine.
6. Slowly fold in egg whites.
7. Spray waffle iron with olive oil spray or brush with melted butter. Begin making waffles as per waffle machine instructions.
