Chicken Meatballs

 

 
 
 
 

 
 
 

INGREDIENTS

6-8 chicken thighs
1 clove garlic
1 egg
2 shallots
1 carrot, grated (or zucchini)
½ bunch fresh parsley

 

 
 

1. Whizz everything in food processor til smooth.
2. Heat coconut or olive oil in a frying pan over medium heat.
3. With wet hands, roll mixture into small meatballs about the size of a walnut and throw in the pan.
4. Cook until golden.
