Choc Tofu Mousse

 

 
 
 
 

 
 
 

INGREDIENTS

100g 70% dark choc
300g silken tofu (room temperature)
2 Tbsp maple syrup
1 tsp vanilla essence

 

 
 

1. Break chocolate up into pieces and place in a heatproof bowl over a saucepan of simmering water and stir occasionally until the melted. Set aside to cool to room temperature.
2. Place tofu, maple syrup and vanilla in a food processor and whizz until smooth. Add the cooled chocolate and process again until smooth.
3. Divide between 4 ramekins or mugs and refrigerate for 20 minutes.

Variations: add the zest of one orange for a jaffa flavour or a tsp of peppermint essence!
Options to sprinkle on top: cacao nibs, shredded coconut, fresh berries or banana
