Choc Chip Cookies
INGREDIENTS
3/4 cup almond meal
3/4 cup plain gf flour (or leave out the gf flour and just do 1 1/2 cup almond meal if you want them to be paleo but I find they're lighter with the flour)
1/2 tsp baking powder
1 tsp ground cinnamon
3 Tbsp maple syrup
1 tsp vanilla extract
2 Tbsp butter (or coconut oil), melted
1 Tbsp peanut butter (or almond butter)
1 egg
1/3 cup chopped dark chocolate or choc chips
INSTRUCTIONS
1. Preheat oven to 160. Line a baking tray.
2. In a medium-sized bowl, combine the dry ingredients.
3. In a small bowl, mix the remaining ingredients (except the choc).
4. Add the wet to the dry, then add in the choc chips.
5. Roll 1 Tbsp-sized amounts of dough with your hands them press down gently onto the lined baking tray.
6. Bake for 10 minutes or until golden. Store in an airtight container in the pantry.
