“Pumpkin" Soup
Another reminder that brekkie doesn’t need to be a box of cereal or Vegemite on toast.
It was a rainy morning here so I heated up some leftover “pumpkin soup” on the stove for mine and Eadie’s brekkie. Ironically there is no pumpkin in there!
I simmered two chicken carcasses ($3 from the butcher) in six litres of water with all the veggies I could find (lots of sweet potatoes and carrots), a stock cube, freshly grated ginger and beef liver powder for about 4-5 hours. I then removed the bones and blitzed it in the blender.
