Brekkie Scramble
INGREDIENTS
Shallots
Bacon
Mushies
Zucchini
Corn spears
Spinach
Brown rice or quinoa
1 Tbsp miso paste or bone broth paste/powder
-Saute all veg in a frying pan with some organic salty butter until tender.
-Then add in the rice and miso paste with a few splashes of water to thin it out.
-Whisk eggs in a bowl, moved the rice/veg mix to the side of the pan and scrambled the eggs.
-You could also fry the eggs and pop them on top like a nasi goreng! This is my fave type of brekkie/lunch and a great way to use up all the odds and ends in the fridge!
