Orange +Almond Muffin
INGREDIENTS
2 oranges
6 eggs
200g raw sugar
250g almond meal
1 tsp vanilla extract
1 tsp baking powder
1-2 tsp cinnamon
1/3 tsp nutmeg
1. Preheat oven to 160. Scrub orange under water. Bring a small saucepan of water to the boil then add in oranges and boil for 1.5 hours or until you can easily slide a butter knife through.
2. Remove the oranges, place on a chopping board, cut into quarters and allow to cool. Then place in a blender and whizz until mostly smooth.
3. Beat the eggs and sugar in a bowl.
4. Add the orange purée and other remaining ingredients to the bowl and beat until combined.
5. Pour mixture into muffin tins or a lined 22cm spring-form cake tin. Bake for 1 1/4 hrs (cake) or until slightly golden and springy.
