Almond Meal Choc Chip Cookies
INGREDIENTS
100g organic butter, softened
1/2 cup coconut sugar
1 tsp vanilla extract
1 cup almond meal
1 tsp ground cinnamon
Zest of one orange
1 egg
1 cup gluten-free plain flour
Chocolate chips. I used 1/2 cup but feel free to measure them with your heart
1. Mix everything together (except the egg, flour and choccy chips) with electric beaters for a couple of minutes until pale and fluffy.
2. Add the egg and continue to beat.
3. Fold through flour.
4. Stir in choc chips.
5. Roll into bliss ball size balls and press down with a fork on a baking tray. Bake for 12 mins or until golden. Ration some up for next week and hide them in a container in the freezer.
This is also a great jam drop recipe if you swap the choc chips for a dollop of jam in the middle!
