Lemon + Macadamia Bliss Balls

 

 
 
 
 

 
 

INGREDIENTS

1 1/2 cups raw macadamias (or cashews)
2 cups desiccated coconut plus an extra 1/2 cup for rolling at the end
3 Tbsp maple syrup (or honey)
3 Tbsp coconut oil
1 tsp vanilla
Zest of two lemons
2 Tbsp lemon juice

 

 
 

INSTRUCTIONS

  1. Blitz the macas and 2 cups of the desiccated coconut together in a food processor until a fine crumb forms.

  2. Add the remaining ingredients and whizz until they become a smooth dough.

  3. Roll in coconut in a shallow bowl. I actually ran out of coconut so I rolled them in coconut flour and it was a game-changer! No messy coconut going everywhere and it really absorbed the excess oil!

  4. Keep these babies in the fridge so they stay firm.
