INGREDIENTS

2 zucchini, grated
1 carrot, grated
1/2 capsicum, diced
4 bacon rashers, diced
1 cob corn, kernels sliced
2 shallots, sliced
1 cup gf SR flour
1 cup grated cheese
6 eggs
Fresh basil
Dried Italian herbs
Pink salt and cracked pepper

 

 
 

RECIPE

  1. Preheat oven to 180.

  2. Combine everything in a bowl.

  3. Pour mixture into a 6-hole silicone muffin tray and the rest into a lined lasagna dish and bake for 30 mins or until golden.

  4. Allow to stand for 30 mins.
