INGREDIENTS

1 cup almonds or cashews
1 cup pecans
1 cup walnuts
1/2 pepitas or sunflower seeds
1/2 cup almond butter
1/2 cup shredded or desiccated coconut
1/2 cup cacao butter or coconut oil
1/2 cup almond meal
1/4 cup honey
1/3 cup sultanas
1 tsp ground cinnamon
1 tsp vanilla extract
Zest of one orange or lemon
Pinch of pink salt

 

 
 

1. Blitz the nuts/seeds in a food processor until coarsely ground.
2. Pour into a large bowl and add in the coconut, sultanas, cinnamon, zest and salt and combine well.
3. Melt the cacao butter or coconut oil in a small saucepan over low heat. Stir in the almond butter, honey and vanilla.
4. Combine all ingredients in the bowl. Line a square brownie tin with baking paper and press the mixture firmly into it. Hot tip: have a little bowl of water nearby to dip your fingers in so the mixture doesn’t stick to your hands.
5. Pop in the freezer for half an hour then cut into small squares. Store in the freezer.

Such a great way to get protein and zinc-rich nuts and seeds into kids! Don’t flip out about the list of ingredients. It’s worth it! Best eaten straight from the freezer.
