The best Chicken Snitz (Ever)

 

INGREDIENTS


4 chicken breasts
1 cup brown rice flour (or any plain flour)
4 eggs, gently whisked
1 cup almond meal
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup sesame seeds
1/2 cup finely grated Parmesan
1/2 cup savoury yeast flakes
2 Tbsp dried Italian herbs
Salt and pepper


INSTRUCTIONS

  1. Slice chicken horizontally. Place between two sheets of baking paper and give it a bash with a rolling pin to flatten.

  2. Grab three flat bowls. Flour goes in one, egg in the second and everything but the chicken in the third.

  3. Coat the chicken in the flour, then the eggs, then the crumb.

  4. Heat a generous amount of olive oil in a frying pan over medium heat. Allow snittys to cook for a few minutes on each side until golden.

  5. Allow to drain on paper towel. We served ours with coleslaw and homemade chippies.
