Mini frittatas

 

INGREDIENTS


6 eggs
2 shallots
Any veggies eg. Peas, roast veg, capsicum, corn, baby spinach, steamed broc, etc
Extras: Ham, feta, olives, sundried toms, fresh/dried herbs like basil or parsley


INSTRUCTIONS

  1. Preheat the oven to 180.

  2. Whisk together the eggs in a bowl.

  3. Add in everything.

  4. Pour into muffin tins and bake for 20 mins or so until set and a bit golden.

  5. Store in the fridge.
