Carrot Bliss Balls

 

 
 

INGREDIENTS


1 cup cashews (soaked overnight in water, then drained)
1 cup almonds (soaked overnight in water, then drained)
1 cup grated carrot (unpeeled)
1 cup desiccated coconut (plus extra for coating)
2 Tbsp coconut oil
8 Medjool dates
1 tsp ground ginger
1 tsp cinnamon
1 tsp nutmeg
1/3 cup organic sultanas


INSTRUCTIONS

  1. Throw everything except the sultanas into a food processor and whizz til combined.

  2. Stir the sultanas through the mixture.

  3. Roll into balls and coat with some extra desiccated coconut.

  4. Makes 30 walnut-sized balls. Split the batch into two air-tight containers. Keep one in the fridge to eat while the other is stored in the freezer.
