Blueberry, Apple + Quinoa Muffins

 

INGREDIENTS


½ cup quinoa flakes
1 cup almond milk
2 cups gf plain flour
½ raw organic sugar*
1 egg
1 tsp vanilla paste
2 tsp baking powder
¾ cup olive oil
1 apple (red or green), grated
1 tsp ground cinnamon
1 ½ cups blueberries (frozen is fine)


INSTRUCTIONS

  1. Preheat oven to 180 degrees.

  2. Place the quinoa flakes and milk in a large bowl. Stir to combine then set aside for 10 mins to soften.

  3. In the meantime, add to a large bowl: flour, sugar, baking powder. Line a muffin tin with papers.

  4. When the quinoa flakes are ready, add in the egg, oil, vanilla and apple.

  5. Combine with dry ingredients.

  6. Fold in the blueberries. Don’t stir too much or the batter will turn purple!

  7. Pour into muffin cups and bake for 30 mins and until golden. Makes about 16.

*The original recipe called for ½ cup sugar AND ¼ cup of maple. I was out of maple so I just used the organic raw sugar I had in the pantry for brewing my kombucha. Definitely sweet enough. I think next time I try using just ½ cup honey. Have an experiment and let me know!
