Banana Bread

Um, first of all can we just clarify that “banana bread” is cake. This one was a crowd pleaser!

Dry ingredients:
1 cup gf flour (I used brown rice flour)
1/2 cup almond meal
1 1/4 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
Pinch of salt

Wet ingredients:
1/3 cup softened butter
1/2 cup coconut sugar
2 eggs
1 tsp vanilla extract
2 Tbsp almond milk
1 cup mashed banana, about 2-3 bananas
1 snuck in 2 tsp sunflower seeds without anyone knowing
Chocolate chips (measure that with your heart)


1. Preheat oven to 180 and line a loaf tin with baking paper.
2. Mix dry ingredients in a bowl.
3. In a seperate bowl, mix sugar and butter with electric beaters until light and creamy.
4. Stir in remaining wet ingredients (except choc chips). Then add dry mixture.
5. Stir through chocolate chips then pour into loaf tin. Bake for 45 mins or until golden. Allow to cool before slicing
