Banana Bread
INGREDIENTS
1 & 1/2 cups gluten-free self-raising flour
1 tsp ground cinnamon
1/3 cup olive oil
1/2 cup honey (or maple syrup)
2 eggs
1 cup mashed bananas (about 2 medium bananas)
1/4 cup almond milk
1 teaspoon vanilla extract
Option: an extra banana sliced length ways or a big handful of frozen berries to pop on top before baking!
1. Preheat your oven to 180 degrees and line a loaf tin with baking paper.
2. Mix the flour and cinnamon in a large mixing bowl.
3. In a separate smaller bowl, mash the bananas then add in the olive oil, honey, eggs, milk and vanilla and mix well.
4. Fold the wet ingredients through the dry ingredients until just combined. Pour the mixture into the prepared loaf tin and place in the oven for 45 mins or until a skewer is inserted into the loaf and is clean when removed.
*I've also made this using buckwheat flour and 1 tsp bicarb soda instead of the gluten-free flour. It worked really well however the buckwheat flavour is quite overpowering.
