Banana Bread
Fun extra: add half a cup of frozen berries, choc chips (or both!) before baking!
INGREDIENTS
1 & 1/2 cups gluten-free self-raising flour
1 tsp ground cinnamon
1/3 cup olive oil
1/2 cup honey (or maple syrup)
2 eggs
2 medium bananas
1/4 cup almond milk
1 teaspoon vanilla extract
1. Preheat your oven to 180 degrees and line a square brownie tin with baking paper.
2. Mix the flour and cinnamon in a large mixing bowl.
3. In a separate smaller bowl, mash the bananas then add in the olive oil, honey, eggs, milk and vanilla and mix well.
4. Fold the wet ingredients through the dry ingredients until just combined. Pour the mixture into the prepared tin and place in the oven for 40 mins or until a skewer is inserted into the loaf and is clean when removed.
